🍃 – Cooking tip – 🍃

🇩🇪 Unser Kochtipp für heute: Suppe mit Dinkel und Wintergemüse. Weil wir Regionalität lieben, nehmen wir die Zutaten natürlich von Bauern in unserer Umgebung. Den Dinkel bekommen wir vom Waldmeisterhof und das Wintergemüse vom Klaudehof. Das tut nicht nur der Umwelt gut, sondern es schmeckt auch noch besser 😋. Hier das Rezept zum Nachkochen:

Zutaten:
Karotten,
Topinambur,
Pastinaken,
Petersilienwurzel,
Zwiebel,
Getrocknete Steinpilze
Wirsing,
Eingeweichter Dinkel. (1 Tag vorher aufquellen lassen)

Aufguss:
Hühnersuppe (Variante für Vegetarier und Allergiker: Gemüsetee Aufguss)

Zubereitung:
Den abgesiehenen Dinkel mit der grob geschnittenen Zwiebel in Olivenöl leicht andünsten. Mit der Hühnerbrühe aufgießen und leicht ca. 20 min Kochen lassen. Anschließend das Bund geschnittene Gemüse (Das harte Gemüse kleiner schneiden, das weiche etwas größer), dazugeben und weitere 20 min leicht köcheln lassen. Mit Salz und Pfeffer abschmecken und mit den frischen Kräutern; Basilikum, Majoran, Kerbel und Olivenöl vollenden.

🇮🇹 Il nostro consiglio di cucina per oggi: zuppa di farro e verdure invernali. Poiché amiamo la regionalità, prendiamo gli ingredienti naturalmente dagli agricoltori della nostra zona. Otteniamo il farro dal Waldmeisterhof e le verdure invernali dal Klaudehof. Non solo fa bene all'ambiente, ma ha anche un sapore migliore 😋. Ecco la ricetta da seguire:

Ingredienti:
Carote,
Topinambur,
pastinaca,
radice di prezzemolo,
cipolla,
funghi porcini secchi
Cavolo verza,
Farro inzuppato di farro. (lasciare in ammollo 1 giorno prima)

Infusione:
Zuppa di pollo (variante per vegetariani e allergici: infuso di tè vegetale).

Preparazione:
Soffriggere leggermente il farro teso con la cipolla tritata grossolanamente in olio d'oliva. Aggiungere il brodo di pollo e far bollire lentamente per circa 20 minuti. Poi aggiungete il mazzo di verdure tagliate (tagliate le verdure dure più piccole, quelle morbide leggermente più grandi), e fate sobbollire dolcemente per altri 20 minuti. Condire con sale e pepe e finire con le erbe fresche; basilico, maggiorana, cerfoglio e olio d'oliva.

🇩🇪 Heute geht ein für uns alle sehr turbulentes Jahr zu Ende. Rückblickend waren es viele kleine und große Herausforderungen, die wir letztendlich gut meistern konnten. Besonders in Erinnerung bleiben wird mir natürlich das heurige Dolomiti Gourmetfestival, das wir glücklicherweise trotz der gegebenen Umstände erfolgreich abhalten konnten. Nicht weniger wichtig war aber jede einzelne Begegnung mit Familie, Freunden und natürlich unseren Gästen. Ein großes DANKE an allen, die Teil dieses besonderen Jahres waren. ❤🙏

🇮🇹 Oggi si conclude un anno molto turbolento per tutti noi. Guardando indietro, ci sono state molte piccole e grandi sfide che alla fine siamo riusciti a padroneggiare bene. Naturalmente ricorderò in particolare il Dolomiti Gourmet Festival di quest'anno, che siamo riusciti a organizzare con successo nonostante le circostanze. Ma non meno importante è stato ogni singolo incontro con la famiglia, gli amici e naturalmente i nostri ospiti. Un grande GRAZIE a tutti coloro che hanno partecipato a questo anno speciale. ❤🙏
